Sweet! This snack is loaded with several sources of natural energy and protein with zero added fats, sugars or dairy. Pretty quick and easy to make. Pop into mouth for tasty, quick energy boost prior to competition. Not bad as recovery snack either! Much better than a store bought energy bar. (My girls love these and so do their friends.)
2/3 cup of Quinoa (find big bags at Costco…source of protein in a grain!)
1 1/3 cup water
1 cup almonds
2/3 cup natural peanut or almond butter
1/2 cup high cocoa dark chocolate chips (Ghirardelli has 65%. Dark chocolate is a natural stimulant, increases blow flow to heart and brain, has potassium, magnesium, and iron, plus antioxidants…)
1 T honey (use raw honey to provide even higher level of nutrition)
Other things you could add in any combo: chopped dried cranberries, goji berries, tart cherries.
Boil water, add Quinoa and simmmer until water is absorbed (just like making rice) Let cool.
Chop almonds, dates (or other dried berries) You can opt to chop chocolate into smaller bits or add to warm quinoa to melt so chocolate is all through.
Mix Quinoa, dates, almonds, nut butter. You can add chocolate and honey into mix or melt together and use as an icing. I added to hot quinoa by mistake, it melted into mix and wound up making end pieces very chocolatey.
Roll into bite sized balls or shape into bars.
